Products

We are a seasonal business purchasing livestock in the spring and raising it through the pasturing months. Our beef and pork are ready from early fall into winter. Chicken is ready late June through September.

All our processing is done at a local slaughter house and butcher shop.

When you buy a side of pork or beef you choose how your meat is butchered. We will walk you through our “cut sheet.”

Pork 

Our piglets are purchased in state from other small farms. Our market hogs are mixed breeds. We feed our pigs an organic custom swine ration. Our pigs are pastured and are able to forage at will.

We sell our pork by the side or whole hog. When you buy a side you receive approximately 100-125 pounds of meat. When you buy a whole pig, it’s approximately 200-250 pounds of meat.

Beef

We purchase yearling calves from farms as close to home as possible. We have herefords and devon-angus crosses in our pastures for the 2015 growing season. We are a pasture-based operation. We practice rotational grazing, in which the animals always have access to fresh grass and forage. We make our own hay and silage for winter feeding.

50# Box:  We choose the cuts for 50# beef orders and work to equitably divide a beef into 50 pound boxes. You’ll receive approximately 20 pounds of ground beef and a selection of cuts ranging from chuck roasts to T-Bones, stew meat to top round steaks and sirloin steaks to soup bones. Your meat will be paper wrapped and well labeled (this is our preferred method).  Ground beef is packaged in 1 lb packages. Steaks will be packaged 1 per package to allow us to divide as fairly as possible. You’ll receive cuts from both front and hind beef quarters. You pay by the pound for the actual amount of meat you receive.

100# Box:  We choose the cuts for 100# beef orders and work to equitably divide a beef into 100 pound boxes. You’ll receive approximately 40 pounds of ground beef and a selection of cuts ranging from brisket to T-Bones, stew meat to top round steaks and sirloin steaks to soup bones and chuck roasts. Your meat will be paper wrapped and well labeled (this is our preferred method). Ground beef is packaged in 1 lb packages. Steaks will be packaged 1 per package to allow us to divide as fairly as possible. You’ll receive cuts from both front and hind beef quarters. You pay by the pound for the actual amount of meat you receive.

Side of Beef:  You choose how your meat is cut up when you order a side of beef. We’ll send you a “beef cut-sheet” to fill out and assist you as needed. You may choose to paper wrap or cryovac (for an extra charge) your beef. You pay for your side by the hanging weight of the beef and then a processing price/lb on top of that.

Chicken

Our chickens are pastured as well as fed an organic broiler feed. We raise slow growing meat birds, Freedom Rangers, that forage well.

We are growing four batches of 250 birds. The first batch will be ready at the end of June and available for your dinner table. Then a batch per month through September.

We sell whole broilers (giblets and neck included) averaging 4-5 pounds each.
