Simple and Delicious Pork Chops




Our favorite cooking method for the juiciest, most delectable pork chops ever!



Ingredients:
  • OCR pork chops

  • salt & pepper


Directions:

1. Salt and pepper chops liberally on each side

2. Heat your cast iron to medium hot

3. Stand chops up on fat cap edge, to render some lard into the skillet to fry the chops in and to crisp the fat to yumminess. You will know this step is done when you have enough rendered lard to coat the pan and fry the chops in.

4. Settle the chops into the lard sizzling in the pan. Cook for 4 minutes (set a timer)

5. Flip and cook the chops for another 4 minutes (set a timer)

5. Remove chops from the skillet and let them rest on a plate for 4 minutes. The carryover cooking will assuredly finish the pork and let the juices settle (don't be nervous about pink)


Make it an easy meal by pairing it with a seasonal veggie, rice cooked in bone broth, and a side salad!
